I’ve always liked the moist, delicious crab cakes you can get at a nice seafood restaurant. They are so sweet and just seem to melt-in-your-mouth. Just thinking about them makes me want to drool! I never imagined how absolutely simple they are to make at home. The kids had never tried crab cakes before so, when my husband brought home some nice chunky crab meat, I figured now was the perfect opportunity.   They were a definite hit!  And, surprise of all surprises, the youngest loved them! Loved them so much that she wanted them for lunch the next day. I can’t tell you the last meal that happened with.

At my house, these are called “Grammie’s Famous Disappearing Cookies”. That is because the recipe is from my mother-in-law and they are famous for literally seeming to evaporate from my counter! My husband always said that he loves Ginger Snap Cookies but I could never find the right recipe to satisfy the craving. That is, until my mother-in-law shared this one with me. Now, this is my go-to cookie recipe for almost every occasion. If I need to make cookies for an event or bring cookies to a friend, it is these. If the kids are looking for a sweet treat, these cookies satisfy every time. They are simply everyone’s favorites!

I love growing tomatoes in the summertime. There is something wonderful about being able to walk into your own yard and pick something for dinner. Plus, garden fresh tomatoes are the best!  Seriously, the bright, sweet flavor of a garden tomato puts anything you can find at the grocery store to shame and they are pretty easy to grow, too. Store bought tomatoes will work well in this recipe also but if you grow your own tomatoes or can get to a farm stand to buy fresh ones, use them. You won’t regret it!

So, despite the fact that I love to cook and I tend to be a compulsive planner, sometimes (more often than I’d like to admit) evening rolls around and I have no idea what’s for dinner. Chicken drumsticks paired with zesty mustard and sweet, sticky honey how can you possibly go wrong?  I think most people have had honey mustard chicken at some point in their lives.  What makes this recipe extra tasty is the brown sugar rub that goes on the drumsticks before cooking them.  I’ve tried it with the rub and I’ve tried it without.  It is definitely worth the extra 5 minutes to make the rub!  I found this recipe in the Slow Cooker Revolution cookbook that Santa brought me a few years back.  It quickly became a family favorite but I usually only make it in the cooler months because the final part of the cooking process to crisp the skin up happens under the broiler.  I do not want to heat up my kitchen like that on a summer day!  But, this is a cool, rainy summer day….perfect!   (more…)

If you can boil water, you can do it.  And  homemade chicken broth is far tastier that anything you can get at the grocery store!  Now that I know how to make it myself, I make a batch of chicken broth almost every time that I roast a chicken.  That way, the chicken does double duty and I really feel like I’m getting my money’s worth. This stuff is so versatile too!  It freezes well or, if you have a pressure cooker, you could can it like I did.  Then, any time you want soup or want to add extra flavor to a rice dish or casserole, you can just pull it out and, presto, a healthy flavor boost that is chock full of vitamins and minerals!

This is a really simple recipe for a flavorful gluten free rice pilaf that reminds me of Rice A Roni but tastes even better!

Mouthwatering rice pilaf with savory, soft orzo is something my family hasn’t had in quite a while.  A box of rice pilaf used to be a pantry staple around here but, since we are currently not having wheat products because of food sensitivities, I thought that was a thing of the past. This flavorful side dish reminds me of some of those boxed mixes but without the gluten and without the MSG and several other ingredients that I can’t pronounce. This recipe is also low sodium, unlike some of the boxed mixes that have more than 700 to 900mg of sodium per serving!  The only sodium in this recipe is whatever is in the chicken broth. You don’t need to add a ton of salt for it to be super delicious.  You just need a simple seasoning blend of herbs and spices you probably already have on hand.
