I really like making quick breads. They are always delicious and, just like the name says, they are super quick to make. There is no need to mess with yeast and wait forever while the dough rises.  Just mix the ingredients and bake. It is really just as simple as that! Of course, banana bread is the classic quick bread, not to mention being a fabulous way to use up overripe bananas. My family especially likes this Marble Banana Bread.   Pumpkin Bread is an absolute favorite, too, especially in the fall.  Another family favorite is this Blueberry Bread. With bright, sweet blueberries cooked into a slightly sweet bread, what is not to like?

Another reason that I like quick breads is that they really do not require any special mixes or hard to find ingredients. If you have flour, sugar and a few other pantry staples, you can probably throw together a quick bread. I almost always have frozen blueberries on hand. It is so simple to thaw a handful and toss them into pancake batter or a smoothie. They are also perfect for this Blueberry Bread recipe. You can feel free to use fresh blueberries, which is what I do during blueberry season.  But, with snow in the forecast and six inches of it on the ground, blueberry season is pretty far off.  Frozen blueberries are a great way to get all the fresh blueberry flavor you want when the blueberry bushes are covered in ice and snow.

Creating this simple Blueberry Bread could not be easier. Start by combining flour, sugar, baking soda and salt with eggs, milk and oil. Then gently fold in about a cup of blueberries.  I like to sprinkle my Blueberry Bread with some raw sugar in order to create a sweet, crisp crust.  Then, simply bake it for about an hour and you have a wonderfully tasty treat.

Blueberry Bread

So good yet so easy, soft and sweet Blueberry Bread is a quick bread recipe that is perfect for breakfast or an afternoon snack.

Ingredients

  • 1 and 1/2 cups flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/4 cup oil
  • 1 egg, beaten
  • 1 cup blueberries (fresh or frozen)
  • 2 tablespoons raw sugar (optional)

Instructions

  • Preheat oven to 400°
  • Spray bread pan with cooking spray
  • In a medium bowl, combine flour, sugar, baking powder and salt
  • In a small bowl, combine milk, oil, egg and vanilla
  • Add milk mixture to flour mixture and stir to combine
  • Gently fold in blueberries
  • Transfer batter to prepared baking pan and top with raw sugar if you choose
  • Bake 50 - 60 minutes
