Cheese Steak Calzone

Part cheese steak, part stuffed bread, a Cheese Steak Calzone is the best of both worlds.

cheese steak calzoneI have been craving a good steak sandwich for a while now. Thin, tender strips of beef with sauteed onions and peppers is a great way to start any recipe! When you add the creamy melted cheese and it is just so melt-in-your-mouth delicious! Sure, you could toss it all in a sub roll and call it good but it is much more fun to roll it in a pizza dough!

cheese steak calzoneThe pizza dough that surrounds the mouthwatering steak and cheese in this recipe is really quick and easy to make, too. That means that you can have a hot, delicious Cheese Steak Calzone on the table in less than an hour. The pizza dough is a simple combination of flour, salt, oil, yeast, and water and it only needs about 10 minutes to rise. We are not making bread here, pizza dough does not need to rise a whole lot.  That gives you plenty of time to prepare the filling.

cheese steak calzoneThe filling for the Cheese Steak Calzone begins with a pound of roast beef from the deli. When I want a relatively quick dinner, I’m not going to start by cooking a whole roast beef. Although leftovers would be a great solution as well, deli roast beef is the perfect solution today. It is already pre-cooked and sliced thinly so it cooks in a flash. Slice the roast beef into strips and saute it with strips of onions and peppers. Once the dough rises, just roll it out and place the cheese and the beef and veggies down the center. Make sure you leave about an inch or so at the top and bottom so you can seal it.  Carefully, roll the dough around the filling and seal the edges. It actually looks more like a long stuffed bread than a rounded calzone but it tastes great! If you would like it to brown nicely, brush the dough with an egg wash before popping it in the oven. 15 to 20 minutes later, you have a delicious hot Cheese Steak Calzone that your family will love!

Cheese Steak Calzone

Part cheese steak, part stuffed bread, a Cheese Steak Calzone is the best of both worlds!


    For the filling
  • 1 pound deli roast beef, sliced into strips
  • 1 cup onion, sliced
  • 1 cup green pepper, sliced
  • 3 oz provolone cheese
  • For the crust
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 2 teaspoons yeast
  • 3/4 cup warm (not hot) water
  • egg wash (optional)


  • Preheat oven to 425°
  • Add yeast to warm water and set aside
  • In a medium bowl, combine flour, salt and oil
  • Add yeast mixture and stir to combine
  • Knead dough 20 to 30 times, cover and set aside in a warm spot to rise 10 to 15 minutes
  • In a large pan, saute roast beef, onions and peppers over medium heat until vegetables are tender
  • Roll dough into a rectangle approximately 12 x 14 inches
  • Lay provolone cheese along the middle of the rectangle, top with beef and vegetable mixture leaving at least 3 inches along the sides and an inch on the top and bottom
  • Roll dough over the filling and seal edges
  • Brush with egg wash (optional)
  • Bake 15 - 20 minutes until crust is browned
