I may have mentioned this before but my family loves Mexican flavors! From my Loaded Chicken Nachos to the ridiculously simple to make Chicken Quesadillas, we have some kind of Mexican food at least once a week. This easy Crock Pot Pulled Chicken is definitely going to be part of the regular rotation! As you may have guessed, this is not a traditional, barbeque flavored pulled chicken, although, if you want to add barbeque sauce instead of salsa, it certainly could be. That would be delicious, too. Come to think of it, maybe that will be on next week’s menu.

But, back to this Crock Pot Pulled Chicken. With only two ingredients, there is really nothing to it. It hardly even qualifies as a recipe!  I’m all in favor of spending time in the kitchen to cook a wonderful meal for my family but sometimes, a simple meal is just what I need. Plus, there is something to be said for coming home to a meal that is already fully cooked. Am I right?  Since your slow cooker does all the work for you, this recipe really could not be easier.

Crock Pot Mexican Pulled Chicken

All you need to do is add about a pound and a half of boneless chicken to your slow cooker with your favorite salsa. How simple is that? Today, I am using boneless chicken breast because that is what I have on hand. boneless thighs would be wonderful, too. My family loves Newman’s Black Bean and Corn Salsa so that is what I used. Feel free to use anything your family prefers. Have you seen the salsa aisle lately? There is no limit to the possibilities. From mild to hot, from regular garden salsa to mango or pineapple flavors, the choice is yours. You could really make this recipe dozens of different ways by just changing the salsa!

This Crock Pot Pulled Chicken is perfect wrapped in a burrito a quesadilla with a side Spicy Black Beans. As you can see, I chose to use mine in tacos. It makes a great topping for nachos, too!

Crock Pot Mexican Pulled Chicken Tacos

A 2 ingredient Crock Pot Pulled Chicken is unbelievably quick to toss together in the morning so that you have moist, pulled chicken full of Mexican flavors when you get home.

Ingredients

  • 1 and 1/2 pounds boneless chicken
  • 1 (16oz) jar salsa
  • tortillas and taco fixings of choice

Instructions

  • Spray Crock Pot
  • Add boneless chicken and salsa
  • Turn chicken to coat
  • Cook low 4-6 hours
  • Shred chicken with 2 forks and toss with cooking liquid
