Easy Zucchini Bread with Chocolate Chips

I found a treasure in my freezer. Shredded zucchini from last year’s garden! It’s the perfect excuse to make this Easy Zucchini Bread with Chocolate Chips. The addition of chocolate chips gives this bread just the right extra touch of sweetness. It is perfect for an afternoon snack or a lunchbox treat!

Have you ever grown zucchini in your garden? If you have, you know that just one plant can produce more fruit than anyone can use. And, with more than 1 plant, you’ll be giving your neighbors, coworkers, everyone you know, more zucchini than they can handle. My solution? Shred it and freeze some for another time. I just run it through the food processor and freeze it in 2 cup portions. Then when I want some Easy Zucchini Bread with Chocolate Chips, I just thaw the zucchini and whip up a batch. Don’t you think there is something wonderful about using summer produce in the middle of winter? That’s what my grandmother always did, too. That and make an awesome relish with it but that will be a story for another day. Kitchen tip – Remember, if you freeze your shredded zucchini, there will be some water released from it when it freezes. If you are using frozen zucchini for this recipe, do not drain that water. It adds nicely to the moisture of the bread. My grandmother always put walnuts in her zucchini bread but few people in my house like it that way so I decided to change it up a little and add a couple of handfuls of chocolate chips. Everyone in my house likes those! And a slice of Zucchini Bread with Chocolate Chips makes a great homemade lunchbox snack! You can actually make this Easy Zucchini Bread with Chocolate Chips in any size pan that you want to use. You just need to adjust the cooking time accordingly.  I’ve even used the batter to make muffins. I tend to make this bread in mini loaf pans most of the time, though, so I can freeze a few for later.

Easy Zucchini Bread with Chocolate Chips

I like to make most of my breads in my stand mixer and this zucchini bread is no exception. I really like the “hands free” ability of a stand mixer. But, if you do not happen to have one, no worries, you can just use a hand mixer or even a whisk will do the trick. Start by beating the eggs and gradually adding the sugar until it is completely incorporated. Then beat in the oil. In a separate bowl, combine flour, salt, baking soda, cinnamon and baking powder. Alternate adding half of the flour mixture and half of the zucchini at a time. Mix in the vanilla and the chocolate chips. Transfer the batter to greased pans and bake the Zucchini Bread with Chocolate Chips at 350° for 55 -60 minutes if you are making full sized loaves or 35 – 40 minutes for mini loaves. This Easy Zucchini Bread with Chocolate Chips freezes well, too. Just wrap it tightly and it will keep for at least 6 months. Who knows, maybe you will find a treasure in your freezer someday!

Easy Zucchini Bread with Chocolate Chips

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 and 1/2 cups flour
  • 1 teaspoon salt
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 2/4 teaspoon baking powder
  • 2 cups grated zucchini
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350° Grease loaf pans
  • Beat eggs
  • Add sugar and beat until well combined
  • In separate bowl, combine blour, salt, baking soda, cinnamon and baking powder
  • Alternate by adding half of the flour mixture followed by half of the zucchini at a time
  • Mix well to combine
  • Add vanilla and chocolate chips
  • Transfer to loaf pans and bake
  • -55 - 60 minutes for 9" loaf pans
  • -30 40 minutes for mini loaf pans

Notes

If using frozen shredded zucchini, there is no need to drain the liquid. It will add to the moisture of the bread.
