Homemade Oatmeal Bars are a much more wholesome alternative to most store bought granola bars. When you add a couple of handfuls of M&M’s, they will satisfy your sweet tooth too!
When people say that teenagers are eating machines, they are not kidding! My kids are absolute snack-a-holics. Now, I could buy cases of granola bars and stuff like that. But, not only does that get a bit expensive after a while, most of the foods in the snack aisle of the grocery store are full of artificial ingredients, high fructose corn syrup and several things that I cannot even pronounce. After years of making better food choices to help my daughter’s belly heal, I have no intention of going back to square one now! I would much rather spend a little time on a day off to make some homemade snacks. These Homemade Oat Bars with M&M’s are really easy to make and they only take twenty minutes to cook so they are super quick, too. Win-win!
I will admit that M&M’s are not exactly the world’s most healthful food choice. But they sure are delicious! The key is moderation which is not something I am great at but it is a work in progress. So, some of these soft, tasty M&M oatmeal bars will go into lunchboxes this week and some of them will go into the freezer. They will keep for at least 3 months and I am sure they will come in handy another day.
Making these Homemade Oatmeal Bars with M&M’s is pretty simple. Hands on time is probably less than 10 minutes. Just mix some flour and quick cooking oats with baking soda and salt in a small bowl and set it aside. Then cream together butter and brown sugar. I love to use my stand mixer for this. They are a little pricey but so totally worth it! If you ever have the opportunity to get yourself one, do it! I use mine almost every week for something. Of course, a simple hand mixer will do the trick.
Once the butter and sugar are combined, add an egg, vanilla and a dash of water which will help the oats to soften. Then slowly add the flour and oat mixture. Mix until everything is well combined. This whole recipe only uses about 3/4 cup of M&M’s. I usually add a half of a cup to the batter and then sprinkle the remaining quarter of a cup on top. Homemade Oatmeal Bars with M&M’s only take about 20 minutes to bake. Let them cool a bit before cutting them so they do not crumble.
