Italian Wedding Soup

I love soups of all kinds.  Whether it is Chicken Tortellini Soup or a Hearty Beef Stew or something else, I really can’t even pick a favorite.  When the weather gets colder, all I want is a nice big bowl of soup. With the wind chills being below 0° here in New England this week, it is definitely soup weather! This Italian wedding Soup with the cute mini meatballs is an absolute family favorite!

It all starts with a flavorful chicken broth.  Of course, homemade… is best if you have some on  hand, but we don’t always have That on hand  do we? don’t stress over that,  store bought is just fine if that’s what you’ve got.  Add to that some tender mini meatballs, spinach and a bit of pasta and you’ve got a wonderfully hearty soup. Making the meatballs takes s bit of time but it is totally worth it! Start by combining ground beef with soft bread crumbs, Parmesan cheese and an egg.  Shape the mixture into mini meatballs (mine are about a ½ inch) and brown them in a bit of olive oil. You could skip the browning step but it really does add a lot of flavor!

Set the meatballs aside while you saute the onion, carrots and garlic. Then add chicken broth, meatballs and pasta to the pot.  I used acini di pepe pasta in my soup. It’s like tiny little pearls of pasta. If you can’t find that, orzo works just fine. Bring it all to a boil and cook it until the pasta is nearly done. Add the spinach for the last 3 or 4 minutes of cooking time. Finish the while pot off with a bit of Parmesan cheese and you have a wonderfully flavorful,  hearty soup  that is perfect for those cold winter nights.

Italian Wedding Soup

A true classic, Italian wedding Soup is the hearty combination of flavorful chicken broth, with veggies, pasta and cute little mini meatballs. It is perfect for a cold winter night.

Ingredients

  • 1 pound ground beef
  • 1 slice of soft bread, cut into small bread crumbs
  • 2 teaspoons grated Parmesan cheese
  • 1 egg
  • 2 tablespoon olive oil
  • 8 cups chicken broth
  • 1 cup diced onion
  • 1 cup diced carrot
  • 2 cloves garlic, minced
  • 1/2 cup acini di pepe pasta (or orzo)
  • 5 ounces baby spinach
  • 1/4 cup grated Parmesan cheese

Instructions

  • Combine ground beef, bread crumbs, 2 teaspoons Parmesan cheese and egg
  • Shape into 1/2 inch meatballs
  • Working in batches as necessary brown meatballs in 1 tablespoon olive oil and set aside on paper towels to drain
  • In a large pot or dutch oven, saute onion, carrots and garlic in 1 tablespoon olive oil about 5 minutes until onion is translucent
  • Add chicken broth, meatballs and pasta
  • Bring to a boil and cook for 7 minutes
  • Add spinach, cover and cook 3 - 4 more minutes
  • Add 1/4 cup grated Parmesan cheese and remove from heat
