I love soups of all kinds. Whether it is Chicken Tortellini Soup or a Hearty Beef Stew or something else, I really can’t even pick a favorite. When the weather gets colder, all I want is a nice big bowl of soup. With the wind chills being below 0° here in New England this week, it is definitely soup weather! This Italian wedding Soup with the cute mini meatballs is an absolute family favorite!
It all starts with a flavorful chicken broth. Of course, homemade… is best if you have some on hand, but we don’t always have That on hand do we? don’t stress over that, store bought is just fine if that’s what you’ve got. Add to that some tender mini meatballs, spinach and a bit of pasta and you’ve got a wonderfully hearty soup. Making the meatballs takes s bit of time but it is totally worth it! Start by combining ground beef with soft bread crumbs, Parmesan cheese and an egg. Shape the mixture into mini meatballs (mine are about a ½ inch) and brown them in a bit of olive oil. You could skip the browning step but it really does add a lot of flavor!
Set the meatballs aside while you saute the onion, carrots and garlic. Then add chicken broth, meatballs and pasta to the pot. I used acini di pepe pasta in my soup. It’s like tiny little pearls of pasta. If you can’t find that, orzo works just fine. Bring it all to a boil and cook it until the pasta is nearly done. Add the spinach for the last 3 or 4 minutes of cooking time. Finish the while pot off with a bit of Parmesan cheese and you have a wonderfully flavorful, hearty soup that is perfect for those cold winter nights.
