Since I’m working full time this year and this has been a super busy week, I’ve been all about quick and easy Christmas treats. Last week I made a White Chocolate Snack Mix that was a huge hit. In fact, I think I am going to need to make another batch of that before Christmas! This week, I am making Peppermint Bark and you will not believe how quick and easy it is to make! It is the perfect recipe if you need a last minute Christmas treat.
It is really no secret that I have a huge sweet tooth. Usually, I reach for chocolate when I want something sweet. But in the weeks leading up to Christmas, I really like peppermint candy canes. I have been known to harvest them right from the Christmas tree. Peppermint is such a nice refreshing flavor. This Peppermint Bark recipe combines the best of both worlds. You get the smooth creaminess of white chocolate and the rich flavor of dark chocolate combined with the refreshing crunch of peppermint bits. It is the perfect treat to satisfy a sweet tooth attack. Peppermint bark also makes a great homemade gift.
You won’t believe how easy it is to make either. Melt a package of good quality dark chocolate chips in the microwave. It really only takes a minute or two but don’t forget to stir it frequently so it doesn’t burn. Spread the chocolate in a prepared baking dish and let it set for a little while before melting white chocolate chips and pouring that over the top. It is important to use decent quality chips for this recipe. I use Giardelli. I find that the store brands just do not melt nearly as well. Once you have the two types of chocolate in the pan, sprinkle the top with chopped peppermint candy and let the chocolate cool. Once everything is cooled and the chocolate is set, simply cut or break the bark into pieces.
