Who doesn’t love a great pepperoni pizza? These Pepperoni Pizza Pockets roll all of that slightly spicy, cheesy goodness into a hand held package. They are the perfect size for dinner with a nice side salad. My original plan was to freeze these Pepperoni Pizza Pockets for a quick meal on a busy day. But, then I let my son have one and the other 3 disappeared in a flash. I have learned my lesson. Next time, I need to make a double batch!
Actually, these Pepperoni Pizza Pockets are so easy to make that they would work any night of the week anyway. They take less than an hour from start to finish. They start with just a basic pizza dough. You can take a short cut and by pre-made refrigerated pizza dough from the deli section of the supermarket or you can make my recipe for a quick pizza dough. If you are using a refrigerated pre-made dough, you will need to take it out ahead of time so it can come to room temperature.
Once the dough has risen, divide it into 4 even pieces. Working with one piece at a time flatten the pieces into a 6 – 7 inch circles. They do not need to be perfect, these little hand pies are rather rustic looking anyway. Spread a heaping tablespoon of sauce over half of the circle, making sure to leave at least 1/2 inch around the edge so you can seal it later. Place shredded mozzarella cheese over the sauce and top with a couple of slices of pepperoni. Carefully fold the circle in half and crimp the edges. Then, transfer to the baking sheet and brush the crust with an egg wash. These Pepperoni Pizza Pockets only need to bake for about 10 – 12 minutes and dinner is served.
