I have always loved pesto. The simplicity of basil, Parmesan cheese and pine nuts with garlic and olive oil is just delicious. It reminds me of summer. Actually, last summer was when my kids became huge pesto fans! We were on vacation in upstate New York when we stopped for lunch and ordered pesto fries. If you have never had pesto on fries, you are definitely missing out! Anyway, now, the whole family is happy to eat almost anything that is served with pesto. Even plain old chicken breast is made so much more flavorful with this simple sauce.
Of course, nothing compares with fresh pesto. I will be growing a bunch of basil in my garden this year just so I can make some. There is just something really cool about stepping out into your own yard to pick something fresh for dinner. But, here in New Hampshire, it is way too early in the season for garden fresh herbs so a jar will do. We have tried a few different kind of jarred pesto from the grocery store. Some are way too heavy on the garlic, some are mostly olive oil, some are too chunky for our tastes. Our family’s favorite is DeLallo Simply Pesto. The flavor is the closest thing to homemade I have been able to find and it tastes fabulous on almost anything.
