Sweet Cornbread

The absolute best cornbread recipe is a buttery, tender cross between cornbread and cake. This is definitely my family’s favorite Sweet Cornbread recipe!

Some meals just cry out for a side of tender, slightly sweet cornbread.  Sure, you can use a box of cornbread mix but I would rather have more control over my ingredients.  I almost always have the ingredients for this simple Sweet Cornbread in my pantry anyway and it is a super quick side dish to whip up when I need one.  In fact, the recipe for the cornbread I used to make was a slight adaptation of the recipe from the side of the cornmeal container.  It was alright but a little bit bland. Not so with this recipe!

This Sweet Cornbread recipe is fantastic! It is soft and tender with just the right amount of sweetness to make it absolutely delicious. It is perfect with chili or taco pie and is easy enough to make on a busy weeknight with Quick Chicken Fajitas.

Ingredients

  • 1 cup all purpose flour
  • 1 cup yellow cornmeal
  • 1/2 cup sugar
  • 2 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup melted butter (or butter substitute)
  • 2 eggs, beaten

Instructions

  • Preheat oven to 400°, grease 8x8 baking pan
  • In a medium bowl, combine flour, cornmeal, sugar, baking powder, and salt.
  • Add milk, melted butter and eggs
  • Mix until just combined
  • Pour into prepared baking pan
  • Bake 20-25 minutes
